100g brown sugar
50mls strained dark honey
100g shortening
50mls buttermilk
1/2 tspn soda dissolved in 10mls of hot water
280g white flour
1 tspn baking soda
1/3 tspn salt
125g quick-cooking cereal oats
1 egg
75g finely chopped nuts ( walnut, hazelnut, almonds)
75g seedless raisins
1 tspn vanilla essence

Mix the ingredients in the order given, having sifted the flour with the baking powder. The batter should be about the same consistency as biscuit dough. Drop by spoonfuls onto a greased baking sheet about the size of a walnut. Per-heat oven to 160c. Bake at 160c fan assisted/ 180c conventional oven for 15 min. until golden brown. Once removed from the oven dust lightly with icing sugar. This will make approx. 25 biscuits.
